Dum aloo is made in many different ways and according to region the verbiaz changes like Punjabi style dum aloo, Kashmiri dum aloo, Bengali style dum aloo, even dhaba style dum aloo and more.
Ingredients:
Salt- 2 Tbsp
Dhania powder- 1Tbsp
Kasturi Methi-1 Tbsp
Kashmiri Red Chilly Powder- 1 Tbsp
Haldi/Turmeric- 1/2 tbsp
Pepper Powder- 1/2 tbsp
Chaat Masala- 1/2 tbsp
Jeera Powder- 1 Tbsp
Kitchen King- 1 Tbsp
Veggies:
Giner,garlic,red chilly (chopped)-15gms
Onion chopped-2
Tomoto puriee- 1/2 can
Boiled potato- 3-4
Food colur-a pinch
Hung Curd-3/4 cup
Kaju- 3
Oil- 2 Tbsp
Cinnamon Stick-1
How to:
1. Boil in potatoes
2. Add salt,turmeric and red chilly powder to boiled potatoes and toss them
3. Once coated,add 2 tbsp oil to kadai and lightly fry potatoes
4. Remove potatoes ,add cinnamon stick,post that ginger,garlic and green chillies
5. Cook all well for a minute and then add onions,lightly fry
6. Time to add all masalas except kasturi methi
7. After a minute add 3/4 cup hung curd,cook till curd gets absorbed in mixture
8. Add tomato puriee and cook for 3 minutes
9. Now add cooked potatoes and cover the mixture for 5 minutes
10. Garnish with kasturi methi
Dish is ready!
