Syrup soaked fried spirals
Cooking time: 40 minutes
Serves:4-5
Recipe ingredients:
Refined flour – 1 cup (125 grams)
Urad lentil – ¼ cup (50 grams) (Soaked)
Sugar – 2 cup (450 grams)
Red food colour – ½ pinch
Baking Powder – 1/3 tsp
Lemon – 1
Green cardamom – 6 to 7
Ghee – for frying
Recipe method:
Sugar Syrup:
Put the sugar and water to boil. Reduce the flame and simmer till you attain a one string consistency. (about 15 minutes). To check consistency, take a drop of slightly cooled syrup between index finger and thumb and press together.
Jalebi Method:
- Mix well the baking powder into the flour. Add the food color,grinded dal and mix well. Add enough water to make a thick smooth batter.
- Fill the batter in a piping bag or a cheese cloth or a pichku ketchup bottle in which a hole around 4mm diameter has been made.
- Heat ghee in a shallow flat bottomed pan. The ghee should not be too hot.
- Create some fun spiral rings in your kadhai. Pipe around 4-5 jalebis at a time. Allow the sizzle to die out a little and turn the jalebis when firm. Cook on a low flame till the bubbles die out. Fry to a light golden brown.
- Remove the jalebis to a moderately warm syrup and allow the jalebis to soak the syrup(approx.. 3-4 minutes).
