Gujarati Khandvi, Patudi or Roll Khamani is a delicious farsan from state of Gujarat in India.Lets try this easy recipe
Ingredients:
1 Cup Besan
1 Cup Curd
2 Cups Water
1 teaspoon Haldi
1 teaspoon Rai
1 teaspoon Salt
1 Red Chilly
Some Curry leaves
How to make:
Mix in besan,curd,water,salt and haldi to form a runny batter
Heat in a heavy bottom pan and invert the batter
Cook till it becomes thick and sticky
Greese a thali or a plain vessel
Spread hot mixture evenly and allow it to cool for 10 minutes
Mark cuts on the mixture as shown in video
Carefully create rolls
For Tadka:
Heat in some oil and then add rai,curry leaves and red chilly
Once cooked spread the tadka on khandvi rolls
You can also garnish with coconut and coriander leaves
