Veg Dum Biryani :

Ingredients:
3 tbsp biryani masala
1 tbsp paneer masala
1 tbsp coriander powder
1 tbsp red chilly powder
1 tbsp turmeric
1 cup Biryani Rice
6 tbsp ghee
2 nos cloves
2 nos green cardamon
3-4 peppercorns
1 inch cinnamon
1 tiny bay leaf
1 no black cardamon
1 small star anise
1/2 cup dried onion slices
3 cups water
Salt to taste
1 cup yogurt
a pinch of tbsp saffron and red colour
For the vegetable mix
1 cup couliflower
1 cup reddish
1 cup Biryani Rice
6 tbsp ghee
2 nos cloves

1 small star anise
1/2 cup dried onion slices
3 cups water
Salt to taste
1 cup yogurt
a pinch of tbsp saffron and red colour
For the vegetable mix
1 cup couliflower
1 cup reddish
1 cup potato

Method:
- In a pan add ghee 3 tbsp, add all the masalas, dried onion and veggies(par boiled) and cook for 10 minutes

- In a pan add ghee 3 tbsp, add all the masalas, dried onion and veggies(par boiled) and cook for 10 minutes
- Besides veggies cook until the rice is half done with all wholemasalas like bay leaves,cardamoms etc and drain the remaining water
- To the veggies pan add yoghut and cook for 7 minutes
- Once the vegetables are done, assemble them in larger pan , after that add the rice over the vegetables,sprinkle a pinch of chaat masala,biryani masala,food colors,mint leaves,ghee,repeating till three layers

- Place a tawa on cook top and place the pan on tawa,cover with silver foil,cook for 3 minutes on higher flame and than for the next 15 minutes on lower flame
- Garnish it with fried onions, pomegranate seeds and fresh mint leaves.
