Instant Besan Dhokla is a term used to make a point that it can be made pretty quickly and we are proving it here with our tried and tested recipe.
Khaman or besan Dhokla primarily belongs to Gujrati (a state in India located on western coast) cuisine but is equally famous in North India also. And since we are from Delhi, we are a fan too. As a matter of fact, there are many more different versions like Sandwich Dhokla (Sooji version) or an Idli Dhokla.
The differentiation between various kinds of Dhokla is made first with the presentation style and then with the primary ingredient used. Some people like to use Sooji (Semolina) and others the Besan (Gram flour).
Coming to the device that can be used to steam (mind it, its not bake) the Dhokla, there are many options available ranging from our Indian kitchen’s favorite pressure cooker or the standard Microwave .
Dhokla in Idli steamer gives it the Idli shape and the name too. The process in Idli steamer remains same as we have mentioned in the pressure cooker recipe.
Conventional Oven is primarily used for baking and NOT steaming. Hence, it is not a good idea to make Dhokla in Oven.
We have tried the Oven and the results were not positive. The Dhokla turned out to be a kind of hard rubber in texture.
Ingredients:
For Batter or Paste:
2 Cup Gram Flour (Besan)
1 Cup Water
4 tsp Sugar
2 tbsp Oil
1 Pinch Turmeric Powder
1 tsp Salt
3/4-1tbsp Baking Soda
1 tbsp- Lemon Juice
For Seasoning:
1 Tsp Mustard Seeds
2 Tsp Coriander Leaves (Chopped into small pieces)
2 Tsp Sugar
2 Green Chili (Slice each into 2 pieces by center)
10 Curry Leaves
1 Cup Water
2 Tbsp Oil
How to make:
- Take coarse besan or chickpea flour ,salt,turmeric,lemon juice,baking soda and sugar in a bowl .Add in 1 cup water to make a smooth batter.
- The batter should be of pouring consistency. It should not be too thick or too thin.
- The batter will turn foamy. Again mix well. The mixture will bubble up
- Take a microwave safe dish. Grease it well with vegetable oil. Pour the ready batter in the dish. Tap the dish gently.
- Transfer the dish into microwave and microwave the dhokla on high power for 5 minutes.
- After 5 minutes remove the dish from microwave and check with the help of knife. Insert the knife in the middle of dhokla. If it comes out clean, the dhokla is ready. Also you will notice that the sides of the dhokla are loosened if is it cooked.
- Let it stand for 15-20 minutes.
Sugar Syrup:
- In a bowl take water. Add sugar and salt. Mix well. The sugar must be completely dissolved. The sugar syrup is ready.
- For tempering, heat the oil in a pan. Turn off the heat. Add mustard seeds, hing and 3-4 green chillies. As soon as you add chillies, cover the pan with a lid.
- Once the dhokla is cooled down, cut it into pieces.
- Now pour the sugar syrup on dhokla.
- Add tempering over the dhokla.
- Garnish with chopped coriander leaves. Dhokla is already.
